Well, without necessarily going full meta, you have a situation where the guards have obviously better AC than the horses, but fewer HP, while the horses have worse AC but a lot more HP. So it's a situation where you have to pick your poison...

You add your proficiency bonus to d20 checks you are proficient in. You also add an attribute modifier to each roll of the d20. Finally, weapon damage also benefit from the appropriate attribute modifier.
