So when I started my games I didn't realize that I could make subforums. Is it possible to reorganize existing threads into subforums?

Yes. There's a Quick Mod Tools dropdown in the bottom right of all topics in your games. You can use them to move things around and organize however you like.
Just make sure you set up the proper permissions for everyone in your subforums.
