Would it be possible to play a non-EotE race? I'd like to play a Togruta—Ahsoka Tano's race from The Clone Wars. They appear in Force and Destiny, but I can provide the stats for them.

I don't mind. I'd like to see the stats. I've heard they did some neat things with FaD and the new races, and the same for the Hutt sourcebook.

Togruta are 1 Brawn, 3 Cunning, 2s in everything else. 10+Br for wounds and 10+Will for strain. Special abilities are +1 rank in perception, and pack hunters. When performing the assist maneuvre, add 2 boost dice instead of 1.
