How can I remove games from my Games Forum?

I'd like to see just the active games and not the ones that the GM ended. Is that doable?

If you mean the Game Forums subforum, it should only show active and bookmarked games in it. If you're seeing an inactive game, it's probably either because the GM didn't properly retire it or you have it bookmarked.
(If you're seeing a bookmark icon instead of a cube next to the name, it's the bookmark; if you're seeing a cube, the game isn't retired.)

Unfortunately, there is no way to manually remove a non-retired inactive game (unless you use extensions).

In the list on your Games page you will see a small grey seal-looking emblem to the left of the game names. If you click that it should turn orange, this marks that game as a Favorite and then only the ones marked show up in your other lists.

Tried marking games as favorites but it didn't make any difference. It may do so later, when I changed my icon it didn't take effect until I turned the computer off overnight.

I do have a bookmark for one of the retired games, can one unbookmark a game?

Yes, click the bookmark icon again and to toggle it.

Clicking the bookmark just takes me to that game's forum; no option I can see to unbookmark.

That should not happen.

It doesn't show up on my Games page, I'm talking about the Forums page where it does show up in the bottom section entitled Games Forum and it also shows when I click on Games and it lists "My games," the two games I am active in, and the bookmarked one. Both places do have a bookmark symbol like the one you are pointing to.

Those are not the same thing. Those will take you to the game's forum pages. Those icons are purely for information.
That is where you need to mark or unmark the bookmarks.

You can also use the similar looking icon hovering at the top right of the game details page (where you request to join, submit characters and such). This one also has a little star in the middle, but is the same thing. This is the way to bookmark games you are not in (so they wouldn't otherwise appear in your games list).

Try to go to the game's Details page and clicking the bookmark symbol there (it's on top right).
