Display errors on character sheet

If you paste special characters onto the character sheet, they display incorrectly (I think it's a character encoding issue or something).
For example if you type a normal apostrophe/single quote:
'
it works fine, but a 'smart' apostrophe/single quote:
’
causes problems, and looks like this after saving:
Â’
I had the same thing happen with bullet points that were pasted in.

That's weird. I've had trouble with character encoding between PHP and Mongo; I'm still trying to figure out how to solve the problem...
