Given DM_MD's instructions, I propose the following action for Doc:

He moves up 15 to the west (at the corner) and holds his action to cast Sacred Flame on a target if one comes in range (60').

Greta, Axu and Zifu have light. Greta has the torch, Zifu has the lantern she put Light on. Axu put Light on her staff as well, so the immediate area is well lit

I think RAW, wielding a shield means the hand is occupied.

Yes. Torch precludes the use of the shield.

DM, I'm trying to figure out HOW many attacks of opportunity are coming Greta's way if she uses Dash instead of disengage. It looks like 6.

It looks like five to me if she goes one square up, then books it. The four on her, then the one near the corner

I thought so too but in the homebrew list of armor it shows light shields as +1
