In general, I'll make it super-obvious that something is deadly, like having an NPC say "Rumor has it that there's a dragon in that valley. Best to stay clear."
And you can always abandon a quest if you have a bad feeling about it. This may irritate certain people/groups if you've pledged to complete a task, but you can probably finesse the situation...or just hightail it before they can do anything.
