I'm a bit late, but if you still have room, I am interested in a rogueish self-taught Airbender.
Yeah, for sure! I think I'll keep this thread up until we everyone has their character ready and we can start. Probably should decide on a deadline too...
Anyways,

Is this set pre-Aang or post-Korra?
Post-Korra.
Refer to the introductory post for the forum for a bit of context on where we're sitting.

Also, I have been looking at the rules a bit. I'm very familiar with the Genesys/FFG Star Wars system. But is there a real difference here in fighting style between an Airbender and an Earthbender, mechanically speaking, once you look past the bending powers?
I'm not sure what you mean with this question. From a purely mechanical standpoint, no, it all boils down to making ability checks and applying either damage or special effects, no matter what kind of bender you are.
Each bending art has its own list of forms, and obviously, narrating an earthbender's abilities will be way different than narrating an airbender's abilities. I feel a good analogy would be the difference between comparing a cleric's spell list and a sorcerer's spell list in DnD 5e: it all ends up boiling down to making checks or saving throws, and adding different kinds of numbers to different kinds of stats, but the cleric has a more supportive and defensive set of abilities compared to the sorcerer's blaster caster identity.
