Okay, I'm getting a little confused with the advantages, merits, and flaws...
Advantages. It looks like you don't pick any of them, but you should probably list all of them on your character sheet and add up what they equal. DEFENSE is Dex or Wits, whichever is higher. So just list it. HEALTH is stamina + size, etc. The idea is to just calculate them, and make sure their present on the sheet so you have easy reference, right?
Merits, I can't find any where it says how many to pick? How many dots do you have? Clearly if something has a prerequisite, you may not be able to take it but if you have the prereq it or if no prerequisite is listed ... why wouldn't you take them all? Unless of course everyone you pick has a consequence.
That brings me to FLAWS, which if I recall in the original VtM, every dot in merit had to be offset by flaws. As your character gained experience, your merits would increase but your flaws would usually stay the same, unless you got a new one in gameplay. Technically you would improve the balance. I see flaws on the character sheet, but really have had trouble finding any mention of them in either of the red or blue book.
