That is what I am asking about. 'equivalent' is a narrow band at that age, a 15 year old is quite a different beast to a 17 year old. And that is also not solely a product of our education system.
If we want to be different we can be, else all converging on 16 seems simple enough, and seems to be what we have settled on.

after this first scene. Where we start need not be a place we can play more than that first fight and flight.

Well, congregating you all is simple enough. There is a coded message telling all Jedi to 'return', and the place we start can easily be where that message directs people in your area to return to.
The attack on the temple happens just after sunset, Obi-Wan and Yoda don't fix the signal until some time the next morning. Anakin does not fall till later (time-difference unknown since it is a different planet... planets wreak havoc on timezones:).
Out getting together can all happen in the hours between the Order and the 'stay away' signal.
Bacta works in a matter of hours, so this timeframe works.

Yeah, that is a tricky planet, especially to start an Order 66 backstory on and then return to. But we can make anything happen if you want it to. Let us know what was 'just for example' and what was important to your character's story.
One would assume the coded message directed Jedi to a 'local location'? So, if you were on Corusant, then it would direct you to the temple, not where the others are. But if you want start there, we can make a plan.
With this framework in place, tell us where you all
want to be when the Order goes down, or if you don't have strong feelings, tell us that. :)

Where the others are could be a 'known safe location', special to your group, so you head there when you see the temple fall.
If you witnessed and know about the attack on the temple, then the we need to time your arrival such that you don't spoil the surprise for the others. This game only has 'real world consequences' for us to judge our actions by, so we have to keep them in mind when we narrate what we do.
All any of you 'know' before the start is that
you were attacked by clones. You don't all know the details of what happened, and especially not of what is to come.

We can make that our next destination, after we flee. It makes sense for your characters to go somewhere like that. We can change to somewhere else if that gets too hot.
You all were trained in the Jedi temple since you were babes, you don't know how to 'work and make money' (even
Sera, who might think she held down a job, was just exploited and was a kid, so has no real idea:). This business of looking after yourselves is new to you all. You will find that Imperial cities are not the easiest to get by on without a job.

The bacta tank is a thing of the past, it is backstory and not part of what we do after the story starts. If
Voss needs more bacta, then you will need to find more bacta. You are welcome to try take this one with you, but having it is not a foregone conclusion.

Let's decide which opening scene we want, then we can decide which of those fits. The Force and 'coincidence' are strong partners. :)
