Helios has no relevant Knowledge skill for this, ie. South China Sea, geography, sailing, etc. I'll let you make an Outdoors test. But I'm taking into account that Helios has Incompetent (Piloting), so while there's no strict roll required here, flavour-wise I see him very likely to screw up piloting and directing a 'vehicle', even one with a water elemental engine :D :D .

Thank goodness for mapsofts, otherwise this part of the adventure might end up being Robinson Crusoe. :P You still have no GPS nor satellite uplink, but at least you now have a complete and detailed map (not real time though) of the entire region.
The loudness of the shot rang through the silence of the open sea, but with no one around them, it didn't matter. Missy blew a hole in the glass window, and from there she could break through the rest of the window pane, clamber inside, and open the door from within. They now had access to the cockpit, it was up to them whether they were going to run the boat engine or not. The steering console was pretty sophisticated, if either of them knew how to operate it. They also could get to belowdecks, where the sleeping compartments, a small bathroom and a tiny kitchenette were. A storage compartment held some equipment and gear, some spare fuel, two wetsuits and harpoons, flashlights, a net, but no food of any sort, as expected, given that the vessel hadn't been used for some time.

Okay so Helios has been even more isolated than I first thought so here is his outdoors roll and I will retcon my previous post -- is it okay that he knows the Japan is east of Hong Kong and that following the shoreline for now would be a good start?

Also do I need to make a check to see if I can hand the steering over to the water elemental and have it just follow the coastline in the general direction we are currently heading?

I'll assume Missy and Helios by default are sharing information, including the maps, so they know the Hong Kong / China coastline, and the direction of Japan. For 3 successes Helios knows that following the coastline at a set distance is a sensible thing to do, and can explain to the elemental to do so.
I'm don't think you can entirely hand over the steeting over to a Force 2 elemental. Force 2 means it roughly has animal intelligence (Logic 2), so I imagine it's like a horse drawing a cart, left to its own it can somewhat stick to a road, by will require direction, reining, etc. Hint: cast a more powerful elemental if you want a smarter one.

Missy takes some time to search the boat and getting them situated. Patching the window and so on.

In the morning Missy would try on a wetsuit and give the spearfishing game a try.

Ok noted. Once you solve the navigating problem, and, more easily, the food problem, I'm going to advance the plot. Not really going to shipwreck you or make you fight sea monsters. :D

Missy is bouncing some ideas of Helios. They could summon a bird spirit, like an Albatros, that would point them in the right direction. A fish spirit could help them get a real fish, like a Tuna to get near them, so Missy could control its actions to let it get caught.

Been mulling this over while being overtly busy -- question to Bedzone though would Animal Control be enough to make a fish jump out of the water (or onto the boat and is this possible) -- thus allowing us to more easily catch it -- or would the spirit need Compulsion for that (former and/or latter).

Also would the Search power be sufficient to allow a spirit to locate a specific port of call?

Yep I'm either going to invoke that, or use something from Helios' background, namely that he had to attend to a more urgent matter in the village he came from previously, leaving Missy to travel to Tokyo without him.
