Can someone post a brief walkthrough of the 5e level up process? Im not finding time to read through the core book carefully and thoroughly, and I don't want to run into a situation where Im holding up the game.

from 1-2 is not much. maybe another class skill. but mostly just hp. if your a caster you may get some more spells.

And what's the roll / option for obtaining level 2 HP?

You get a d8+CON modifier hp as a Treasure Hunter. So you get the option to either roll it or take the average (5) + CON modifier.
